Atlas - dungeon maps + loot dropped from bosses
Bartender4 - UI
Collect Me - Pet/Mount collector addon
Deadly Boss Mods - Raiding addon (Must for Project Mayhem)
Gearscorelite - GS Shower
Questhelper - title says it all
Ratingbuster - helps you with you class armor
Selljunk - handy button in merchants
SexyMap - gives your minimap a very sexy look
Spartan UI - UI

I use:

Ackis Recipe List - Scans trade skills to see which recipes are missing.
Mapster - Map thing
Recount - Damage/Heal and other stuff meter.
Ratingbuster - *Refer to Jon's list*
Questhelper - Quest helper
Grid - Click and heal grid like thing.
